Wild Game Recipes: Almond Broiled Trout Fillets
Fresh Rainbow Trout
When I saw Mark Zeiger’s Fish On! Fishing on the Homestead post, I thought it was a good time to add some recipes to the site-- this is the first. One of our favorite game recipes is Almond Broiled Trout Fillets . . . we especially like Rainbow Trout.
Here’s what you need:
- 6-8 trout fillets (Time to go fishing . . .)
- 2-3 lemons
- 2-3 tablespoons of sliced almonds
- 1-2 tablespoons of sherry or white wine
- 1-2 tablespoons of butter
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of cayenne pepper
Here’s what to do:
- Turn on the broiler
- Line a pan with foil and spray with Pam
- Sprinkle salt, pepper, and cayenne pepper on foil-lined pan
- Put half the sherry on pan and squeeze some lemon juice on as well
- Put fillets flesh side down/skin side up
- Broil about two (2) minutes until fillets curl and Put sliced almonds in plastic sandwich bag and smash with a spoon until crumbs
- Remove pan and flip fillets
- Apply butter, sherry, and more lemon juice directly on fillets
- Sprinkle almond crumbs on fillets
- Return to broiler for about two (2) more minutes– toast the almonds, don’t burn them
Serve with wild and long grain rice and choice of vegetable(s) (include a lemon slice for the trout).
Prep time is total 10 minutes (including the cooking).

I appreciate this post. I am going fishing this weekend with 6 others and our targeted meat will be Rainbow and Cutthroat Trout. I am glad there are several fisherman in the SRE, and am excited to try the recipe you have provided.
I hope that many times this Saturday I hear the words, “Fish On!”
